Each canon camera has a series number which you can use to decide the manufacture date of the camera.

Canon might be able to tell from the serial number, but there is no way for the end user to determine the exact date of manufacture just from a serial number.
I bought my 7D in Nov 2009 and the serial number is 0270100615. I assume serial numbers are sequential so you might use that to roughly judge how old another camera is.
