A polarizing filter helps reduce glare off certain surfaces like water and leaves. If that is a problem you are having then CPL could help. Be aware that using it with wide angle lenses can cause undesirable effects in the sky due to the wide variation in the angle of the sun.

I think https://en.wikipedia.org/wiki/Polarizing_filter_(photography) has a  good explanation with examples. Some filters can be done later in software when shooting raw, but the polarizing filter cannot be duplicated in software.

As @jrhoffman75 already mentioned, the light from the sky has different polarization depending upon angle with a result being that some parts of the sky are much darker than others when using a wide angle lens with a polarizing filter.
