So I want to be able to set a delay timer, then have the shutter open for a specific amount of time, and take multiple pictures in a row, like one would for Astro photos. I can’t seem to figure out how to get this all setup on my r8 though. Anyone know?

I think what you want is the interval timer, or often referred to as time-lapse. Please start on page 289 of your Advanced Users Guide. The PDF version is easily searched for key words, but you will have to download Adobes free PDF viewer, if you don't already have it. Also, some browsers have a PDF extension.
