Last night I tried to use the interval and bulb timers for the first time on my R5 to capture the northern lights and when I tried to look at them on my computer, they were not there.
I reviewed many of the images using the timers on the camera after taking them and they were there, but not on the cards this morning.
I have images on the memory cards of photos taken right before and right after using the timers, but nothing from either of the timer functions. I took quite a few images (no northern lights to see from here, so I had time to play around a bit).
Any idea what the problem could be?

I don't have the R5, but guessing the interval may be similar to my R6ii, I have not used this function myself.
Did you disable "auto power off" If you did not, and the interval was longer than the shutoff time, it will shut down thee camera.
Could your shutter speeds be longer than the interval? Even it that was the case you should have had your first picture recorded
