How do I set up a 5 or 7 stop AEB for the Canon R7

I'm not sure without actually having your camera in my hands. But it's pretty straight forward. Start on page 172 of your manual and make sure you have AEB set up properly and has the correct spread. The manual will explain how to move the spread. It should look similar to this (see attached) depending on the number of shots.

If you've set up AEB properly, Auto Cancel shouldn't effect the number of shots recorded as it only cancels the session after one go, if set to ON. Just make sure you don't have "HDR Mode" enabled (page 187) as this will force the camera to process your shots "in camera" and produce only one shot, I think it only uses 3 shots regardless of how many you have previously set.

Unless I'm leaving something out, it should be that simple. Setup AEB, set drive mode to H+ (you will have to hold the shutter down for the H setting) or use one of the timers, and your shots should be captured. I use the timer to eliminate any shake.
