I have a canon 5D mk3, and the exposure level meter in both the viewfinder and on the lcd screen has stopped working. Is this just a problem with a setting i might have changed or what? i don't 100% need it, it just makes things quicker and easier.

If it possibly is something you set simply reset your camera to defaults.. That will tell you that immediately.

The exposure scale serves two purposes and which one depends on the camera shooting mode.
For P, Tv, AV the scale shows the exposure and if any compensation is set you will see the central arrow move to the left or right to indicate the amount of compensation.
In M manual mode the scale shows you the result of your current shutter speed, aperture and ISO settings as a mark on the scale. You can use this to see how different your settings are from what the camera metering would use for a correct exposure. In extreme under or overexposure situations the scale mark will be at one end or the other of the scale.
