I want to teach my class about how to do a photograph with multiple exposures (when you take two photographs and merge them together). Some Canon Cameras have this ability in-camera and the internet claims that the Rebel T7 does have this feature and setting but I cannot find/access these settings.
Does the EOS Rebel T7 actually have a setting to do in-camera Multiple Exposure Photography?

All cameras are EOS Rebel T7s and are all updated to Firmware 1.2.1

If you mean the ability to combine two separate images to create an image that is in effect a sandwich of the two frames then the answer is no. The EOS Rebel T7 does not have the multiple exposure function.
This multiple exposure function is a feature found on more advanced models in the Canon range only. Even the T8i doesn't have multiple exposure.
The camera does have the auto exposure bracketing feature, but I think this is different to what you asked for.

It's called Auto Exposure bracketing, or AEB. This is where you take single shots at different exposures: one at normal exposure, one slightly underexposed and one slightly over exposed. You have to merge these later in post processing. Here is a Canon Support page on how to set up AEB for your T7:

Your camera should also allow you to take HDR shots, where the camera does the merging for you.
If you haven't done so yet, I'd strongly encourage you to download a pdf version of your manual. Using the search functions of a pdf reader like Adobe Acrobat, you can search for specific terms in your manual. It will make your life a whole lot easier.
