I usually have my EOS 1200D set to continuous shoot mode when taking people so I can take three photos at once. Whem I turned my camera on yesterday it was set to single shoot mode. I accessed the screen to change it but the option has mysteriously disappeared. The only three options I have are: single; self timer 10 secs; self timer continuous (with the option to choose how many self timer shots I want, from 2-10). The weird thing is I don't remember this self timer continous mode being there before. How do I get the continous mode that's NOT for self timer back?!

What shooting mode are you in? Try one of the "creative" modes like M, Av, Tv, or P because sometimes the mode can effect other options.
You could also restore the camera defaults.
