Greetings,
Current FW is v1.6.0 as of today.
If there was a problem with v1.6.0 we would have heard about it by now. It was released Nov. of 2020.
Your issue is likely related to one of the following:
-Incomplete FW flash
-Corrupt Camera settings
-Faulty lens, 3rd party adapter
-SD card - incorrect formatting, incompatible card
-Network related issue with your environment, wireless router or mobile device
-Malfunctiuoning hardware (camera)
Questions for you:
Was the camera new or used?
What is the brand / model of the SD card you are using?
Is the card full size?
Have you tested with another card or no card installed?
Is the behavior the same?
What lens are you using?
Have you tested with another lens or with no lens attached to the camera?
Is the behavior the same?
Are you using an adapter ring?
Canon brand or other?
Troubleshooting:
-Reset the camera's settings in "M" mode
-Pick a FW version and stick with it (just 1)
-I would suggest reflashing the FW. Card should be formatted in the camera. .FIR file should be put on the root directory of the card.
What are you trying to connect the camera to?
Wireless router?
Mobile device?
Does the camera freeze when you try to make the connection or simply when wireless and bluetooth are enabled?
Provide more specific information about the behavior.

You've done the recommended checks:
Behavior exists across multiple FW's
Reset camera
Tried with different, and no card installed.
No lens installed
Behavior occurs when either wireless feature is enabled and camera restarts on its own
One last thought... the battery? (slim chance this has anything to do with it)
Doesn't sound promising. I recommend you send it to Canon for inspection.

Use another one. I would hope you have more than one. All mirrorless camera with EVF use a lot of battery power.
The last thing you'd want is being out somewhere with a dead or non-functioning battery.
