I have a Canon R5 and want to set the card slots so that my still photos are saved on Card 1 and my videos are saved on Card 2. Under Yellow 1 - Record func+card/folder selection, if I choose still/video separate - Enable, it defaults the stills to card 2 and the video to card 1. Is there a way to reverse this selection?

It doesn't support that option and not surprised since Slot 1 uses CFexpress which has much higher write speed than Slot 2 which only uses SD.
Even with UHS-II speeds, the SD card would max out with sustained writes of around 720 Mbps (V90 speed).
There are numerous movie recording options in the R5 that would exceed 720 Mbps. See pages 925 to 929 in the User Manual for details.
