Can I change the self-timer on my 7d Mark II to anything other than 10 or 2 seconds?

If you don't mind having a throw away shot, you can use the built in Interval Timer.

Set the Interval Timer to whatever delay you want (anywhere from 1 second to 4 days), and 2 photos. 

When you press the shutter, the camera will take the first photo immediately, it will then wait and take the second photo after the delay you have set.
