This just started happening last night. My drive mode is in single shot or even multiple and when I hold the button down to auto focus, it switches to timer. The shot gets taken after two seconds and also takes another shot shortly there after. Has anyone ever come across anything like this? Any info would be much appreciated. I usually use my camera for video and am not as skilled on the photography side. Please, please help. Thanks!

Are you sure you haven't set it to delay or SILENT? Hold down the DRIVE button & roll the rear wheel (that's based on my 7D2 since I don't have a 5D3) through the settings. You want to see a single small rectangle displayed. You can also set it to that rectangle with an "S" beside it for silent operation which is a bit of a slower cycle.

You turned on the timer delay. You can do 'clear all settings' in the menu if you don't know how to turn it back off.
Or, reset the camera.
