got a camera for Christmas cannon T3i with 2 lens- one is not stabalized the 75-300mm should I return the camera or how much does a different does it make with out it

Your lens is OK, especially in bright daytime sunlight, but that is not the best lens in the world, of course.  The camera is not to blame for anything.

Why do so many people say "FER-tographer"? Do they take "fertographs"?

No doubt having IS on a telephoto zoom is beneficial, however in order get IS in that zoom range there is a huge jump in price. Unless you know for sure you that you are going to expand your lens collection and spend a lot money on gear, I would hang onto the lens, enjoy it and learn how to use it. Use it in well lite day light conditions and your photos should be decent.
