Maxify 2720. In photo options it only gives me JPEG or TIFF options to save the photo. I need to save as a bitmap. Why won't it let me?

canon printer Maxify MB2720 won't scan or copy in color

just set up the Maxify MB2720.  Prints from computer in color, but it is only scanning/copying documents in black and white.  How do I change the settings to copy and scan in color?  Working from Windows 10
