I believe the EOS webcam utility is the same for all cameras and OS. On my Macbook Pro I'm running Big Sur also works on my older Mac Mini running Catalina. Does EOS Utility 2 open the camera settings for you? In terms of apps, it only seems to works...
Add the firmware files for the lua updates + fixes to an SD card. Hit the trash icon on the camera and go to powersave in live view > 30 minute timer - set to disable. That is all!

Wow thanks @jjost! Found the setting just like in the post followed the instructions, disabled the setting, and it works!!! Tested and had a zoom conference going for 1 hour and 5 minutes without any disruption!
