Using Epson paper on Canon Pro-300 printer

A) can I use Epson Premium Luster paper on the Pro-300, and B) where are profiles for this?

Welcome to te forum.

You can use any brand paper that meets the weight & thickness specifications or the printer.

If you don’t have or want to create a custom ICC profile the first start would be to select the Canon media type and ICC profile that is closest to your third-party paper. Try using the Canon Photo Pro paper option

Can you use papers from other manufacturers in your Canon printer, yes you can.  However it would be up to you to determine the correct settings that work best.  

Canon provides profiles for its own papers.  I doubt Epson provides ICC profiles for its paper to be used on a Canon printer since they sell printers too.  A more neutral example would be RedRiver or Canson.
