Where you're finding the Super Vivid setting to be too extreme or over-processed looking, is this what you're seeing on the camera's preview screen, on your monitor or in your prints?
If you try out the "Positive Film" setting I'm curious to know what you think of the results. The Positive Film description is still a bit vague but I suspect that what Canon is shooting for is something similar to what you might have gotten by shooting Kodachrome film. The results were usually warmer looking, leaning a bit toward more saturated reds and yellows.

The T5i already has a vivid "ambiance"
It also mentions that the landscape setting already provides vivid colors.
