The M series is discontinued. I don't recommend that you consider any of them.

I started with the RP. A refurb is only $539 now at https://www.usa.canon.com/shop/p/refurbished-eos-rp-body.
R50 or R50V, depending upon your priorities. R50V is $639 refurbished right now. I bought one - no electronic viewfinder and photography options are menu-driven rather than dials and buttons.
R50 with kit lens is $799. Kit lens is just ok.
I would get on the mailing list for a RF 24-105mm f/4-7.1 IS STM. I just got a refurb for $299, and think that's the best deal I've gotten on a lens in a long time.
If it were me I'd go with the refurb RP and the refurb 24-105 and get into full-frame, but that's just my preference. There is really nothing wrong with APS-C and full-frame lenses are good on APC-S, just not the other way around.
You have a great budget there and cannot really go wrong with any of your choices. Be aware that a new version of the R10 may be announced by April-ish (many are hoping so, at least), so this version of the R10 may be a lot more plentiful and cheaper soon. That's nearly always the case, of course - you can wait and get more for your $$.
The R10 has more of the controls and buttons that many photographers consider essential. Of course, they aren't essential for good photos, just makes things a lot more convenient and faster.
I hope you have fun shopping!!

I own the R50 and while it doesn't have a lot of bells and whistles it performs better than it's price point. I like it because it has an EVF, I rarely shoot using the LCD but if you are shooting video it's a bonus. You get the best of both worlds.
On the Canon site you have choices. The first option is in your price range and the second price is a around your budget but offers two lenses with a nice range. Both are new, I looked at the Refurb site and neither are available.
I don't shoot video and I don't own the two RF-S lenses that come with the package. I use the camera quite a bit for macro, this is a couple sample images from the R50, I believe using the RF100mm Macro.
