5D4 - no Histogram in Live View?

After I take a shot (with Live View off),  I can get the Histogram to display afterward by hitting the INFO button twice.

However, when I turn on Live View I never can get the Histogram to display in any of the 4 INFO cycle screens even though I have it set to display on the 3rd INFO screen in the menu options.

I see demo videos on YouTube that clearly show people displaying the Histogram in Live View mode before even depressing the shutter. What am I missing?

Not sure why there is a menu item to turn on/off Exposure Simulation if you can simply turn off the Histogram display anyway? (i.e. why not just leave Exposure Simulation on all the time?)
