My EOS R50 is allowing me to set f-stops greater than the attached lens supports. It happens for all my lenses. I cannot set an f-stop lower than the lens supports. I haven’t been able to find a setting for aperture limits on the EOS R50.

what do you mean by "greater"? is f/1.2 "greater" than f/1.8? The aperture is larger.
Is f/16 "greater" than f/8? The number is larger.

EOS R50 has no menu or custom setting to place limits on the range of selectable aperture values, it is simply constrained determined by the lens that is attached. For some zoom lenses the range may change depending on the zoom position.
For example RF-S 18-150mm f/3.5-6.3 IS STM lens.
For example RF 28-70mm F2L USM lens.
The only exception is old manual lenses that have been adapted to fit on the camera but do not communicate with the camera, for these the aperture value shows as f/00 regardless of the lens actual aperture.
