I recently bought a used Canon 5 D Mark III that had been used for doing mainly video work. However I am missing multiple pages of menu options. Would this be fixed with a firmware update. (I am not sure what version is on the camera because it would be listed on one of the missing pages. Any suggestions?

Sometimes, depending on the mode you are in, certain non-relevant menu pages don't display.
Try resetting camera to factory default and see what happens.

Full menus are available in P, Tv, Av, and M modes.
Only reduced menus are available in Auto (green square) and Scene Modes.
