Which flash trigger do I need for 5D mark 3 to fire a Yongnuo 568 Flash gun ?.

For optical means...you'd need either another 568 or a Canon flash capable of optical master, or the Canon ST-E2 transmitter or the Yongnuo equivalent.

For radio means, any Canon compatible radio triggers will do.  The recommended Yongnuo trigger would be the  Yongnuo YN-622C Wireless ETTL Flash Trigger Receiver Transmitter Transceiver or the YONGNUO YN-622C-TX E-TTL Wireless Flash Controller.
