I can shoot a static subject in static light using the High Speed Continuous drive mode on the R6, and the first two frames will be correctly exposed, but all subsequent frames will be overexposed.
Trying to figure out if there is a setting to keep the exposure automatically locked. I have it set for Center-weighted Average metering, and I have "AE lock metering after focus" set to locked, but this doesn’t seem to actually keep it locked when using Servo focus. Also, it's odd that it always jumps up in exposure and will stay there as long as I hold down the shutter.
I'm using Aperture priority and Auto ISO. For a static shot using High Speed Continuous drive mode and mechanical shutter, I get the following frame stats:
Frame 1: 1/320 F2.5 ISO 2500
Frame 2: 1/320 F2.5 ISO 2500
Frame 3: 1/250 F2.5 ISO 4000
Frame 4: 1/320 F2.5 ISO 5000
Frame 5 (and all subsequent frames): 1/320 F2.5 ISO 5000
I get it that it's an Auto ISO issue, but this does not occur if I set the focus to One Shot. It will hold the exact same exposure for as long as I hold the shutter. Wondering if there's a way to lock the exposure for as long as I have the shutter button held.
I'm not interested in using the AE Lock button to hold exposure as I shoot, even though this DOES fix the problem. I'm wondering if there is a menu setting that will accomplish the same thing for as long as I hold the shutter.

I'm saying that the problem occurs in ALL AV mode situations with Servo focus selected and high speed continuous chosen, including my test situation—trying to eliminate variables—of "a static subject in static light."
I've tried it in AV mode with and without Auto ISO chosen. I get the same results: 2 frame correct, and then all subsequent frames a full stop overexposed.
I'm convinced this is a software issue.

Save your current camera settings in an unused custom shooting mode, if you have one. Do a factory reset of the camera.
Switch to M mode, and ISO Auto. Make no other changes. Take several photos outdoors in the sunshine. Does the issue still persist? At this point, I would not expect it to persist.
{EDIT] Switch to AI Servo. Does it persist? I would not expect it to persist.
Change drive mode to Low Speed and then High Speed Continuous mode. Does it still persist? I still would not expect to see the issue persisting.
Keep adding your favorite settings one by one. At some point the issue might return.
I suspect the issue is related to your AF point selection, AF mode, Drive mode, and metering mode. You are using combinations of settings that I would never use.

Yes, that is pretty obvious. I seriously doubt that one camera, yours, has a unique software issue.
Have you tried the test that I described above? What is your setting for Safety Shift?
Could post a sample RAW file(s) to a download site? This entire thread has so far been conjecture and speculation.

Judging from these exposure settings….
Frame 1: 1/320 F2.5 ISO 2500
Frame 2: 1/320 F2.5 ISO 2500
Frame 3: 1/250 F2.5 ISO 4000
Frame 4: 1/320 F2.5 ISO 5000
…you are shooting in “low light” conditions, possibly indoor artificial lighting.

I have decided that my contribution to this thread should come to an end. You have stated more than once that you are convinced that you have found a bug. You have not answered questions on several topics, instead you have chosen to conduct tests that prove your hypothesis that you have found a bug.
You have not answered the question about Safety Shift, which I posed in the very first response. You seem unwilling or unable to confrim whether or not you have locked AF points when the shutter fires.
Finally, you seem to have refused to perform a basic reset of the camera to factory defaults, which would more than likely resolve the issue. Good luck!

Safety shift has always been off.
I'm not going to perform a basic reset because this camera has about 24,000 different settings (only slightly exaggerated) that I'll have to get *exactly* correct afterward, plus all of my custom settings. It took me two weeks of fiddling to get this camera to being marginally useful. If only Canon would add the option of exporting your settings like on the R5, but I digress...
If you don't want to contribute anymore, that's fine. You haven't really contributed anything of value up until this point beyond telling me repeatedly not to let the camera decide more than a single point of the exposure triangle, and adding "FULL STOP" in bold letters. I think you respond here basically to read your own thoughts in print, and make sure that everyone knows how smart you are.

Following this because I am having the exact same issues but your info has been very helpful. I also noticed when in High-speed shutter the icon is constantly blinking on the back screen.

The blinking icon—as I understand it—is because Canon does not recognize some lenses (third-party or actual Canon-branded) as being able to maintain focus tracking with high-speed shutter engaged.

Awww! Thank you! I am using a canon 50 1.2 with the adaptor. I bet that's it.

Just an update. I experimented with many other shooting modes using my 50 1.2 canon lens attached to the canon adaptor and had the same issues. As soon as I switch lenses the problem goes away. I updated firmware and I still have the same issue with the image increasing exposure in complete M mode with ISO set 1600.
