Should I use vehicle tracking as my subject when shooting aircraft in flight (i.e. will the camera recognize an aircraft when "vehicle" is specified)?

Have you tried it? Generally aircraft are shot with a pretty neutral background and are far enough away, they don't need any focus tracking. The main problem is panning.

I have not tried it yet, but trying to develop a strategy given all the new function. I think what you are saying is to turn off subject tracking for aircraft in the air. But what about aircraft near the ground (e.g. take off roll), should subject tracking be turned on there?

Your best bet is to experiment.
