After having successfully updated to Big Sur 11.7.2, my shared PIXMA iP3000 isn't supported anymore, that all my other machines depend on. Is there a miraculous thing to re-add and use it anyway?

Greetings,
Your printer is 19 yrs old. I'm afraid its not supported any longer. You can contact Canon and discuss your eligibility for a new product upgrade at a reduced price. Please contact a Canon Upgrade Specialists at 1-800-443-8002.
