I have a Canon EOS R7 and I use Canon RF lenses exclusively. My current photo editor is DPP. I shot in raw then edit and save as a JPG. What is maddening is that when I go to "file info", it is not showing but rather says something like "Gail. Off line" and does not show the camera type, lens, setting, etc...all needed especially when entering fun contests like those on DPReview. I wind of going back to the raw and copying the data rather than having it show up automatically.

I use exiftool https://exiftool.org/ to extract metadata.
DPP displays only a small portion of the metadata. I have requested that Canon upgrade DPP to display and allow editing of all of the standard metadata from IPTC and the Metadata Working Group and the stuff that is in the most recent Exif standard.
I use macOS and Debian Linux and not Windows, so things might need to be done differently when using Windows.
Today I saved a file from DPP and will use exiftool to compare the metadata between the out of camera JPG and the JPG saved from DPP.

I have only listed the first portion of the results. DPP removes most of the "makernotes" from the metadata and adds an ICC profile. The focus point information is simplified and the new image dimensions are listed.
A few years ago, I also started saving a recipe dr4 file from DPP so I have a record of my edits. Exiftool can also extract the contents of the dr4 file. Rawtherapee saves edit information in a PP3 file. It has been many years since I have used any Adobe software, but exiftool can extract some information from XMP files.
I usually use exiftool to copy the makernotes from the out of camera JPG to the file saved by DPP. Then I use exiftool to add description, keywords, MWG tags, and IPTC tags for any images I might put on my webserver.
The makernotes saved by the camera are not exactly the same between CR3 file and JPG file.

perhaps this alone is a good reason to buy Photoshop/Lightroom?

Adobe software discards much of the Canon metadata and adds XMP metadata. Some of that XMP metadata has been incorporated into the IPTC and MWG standards.
gimp free software allows editing of metadata.
rawtherapee free software allows editing of metadata
Other free software that I do not use allows editing of metadata.

I recommend deleting the program. Download a fresh copy and install it.
