In the past Canon had a 32 bit photo stitch app....then MAC went to 64 bit and the APP was "legacy" Any recommendation for a stand alone stitch program...simple and easy to use. ??

macOS has been 64-bit only for quite some time now.  The other thing to be on the lookout for is if whatever software you'll end up with either currently supports Apple Silicon, or plans to do so sooner than later.  macOS will not indefinitely be able to run Intel applications.

Having said that, I personally use Adobe Photoshop.  In looking at the Mac App Store, there are various stitching/panorama creation software, but the vast majority are rated extremely low (one perhaps two stars).

I know that Joel Grimes (one of Canon's Explorers of Light) used PTGui (available for macOS) alot.  Maybe still does on occasion alongside Photoshop.   See ptgui dot com.  There's a basic and pro version available.

I like Hugin on Linux, but have not tried it on my iMac. Hugin is free software. For simple mosaics it is mostly automatic, but for two dimensional mosaics I have often needed to specify the control points manually to get the results I want.
