The manual is your friend & it should cover (with samples) this but to start with Shutter Speeds are the same as Tv (in Canon lingo) which is Time Value. Av =aperture setting & M is for full manual operation where you select both the Tv & Av based on the light meter reading. I also highly recommend finding the section on Exposure Compensation & learning how to use it by instinct.
