Switching from Sony α7 IV: Canon recos for portraits and sports

Hello everyone, I am switching from the Sony A7IV. I primairly shoot portraits but I love to shoot sports whenever I can. Portraits being my money maker and sports being more of a hobby. I have roughly 8k Budget and I have narrowed it down to two different set ups, just to get the ball rolling. 

Setup 1: Canon R5ii with the RF 28-70 f/2. This would be used as my daily driver and money maker until I can afford longer lenses to shoot my hobbies. 

Setup 2: Canon R6ii with the 28-70 f/2 and the 70-200 f/4.( I would prefer the 2.8 but budget just doesnt allow at this time.) This setup allows me to cover all my focal lengths but im nervous about the R6ii for portraits and weddings as I like the idea of more megapixels. (Pixel anxiety coming from 33mp of the Sony A7IV)

I know both cameras are fantastic and the 28-70 f/2 would be a staple regardless of body choice. I know its a hefty boy but im trying to get away from carrying around 3 different primes when I shoot a wedding. Any and all advice to calm down my decission making anxiety would be huge.

First, I'd like to welcome you to the the Canon family. Or welcome you back if you are returning. There all a lot of people who hang on to their Sony gear and use both interchangeably, but ultimately most stay loyal to Canon.  We love Canon here, but will always encourage people to buy and use what they can afford, what they like and what they are most comfortable with.  It's not all or nothing.  We also understand the capital expense of changing platforms.  

In your case, given the fact that you don't shoot video, I recommend the R5 mark II.  It will address megapixel anxiety and also meet your flash needs for portraits and weddings in conjunction with your RF28-70 f2 to start.

Are you using flash by any chance since you mention wedding photography? Do you have a computer powerful enough to handle 45 megapixel images. The closet camera to yours in the EOS R series is the EOS R6 Mark II. If you shoot with flash only the EOS R5 Mark II will fire the flash in Full Electronic Shutter mode. The EOS R6 Mark II along with other lower end EOS R series bodies WILL NOT fire the flash in that shutter mode.

I have a Macbook Pro M2 it handles the files from Sony's 33mp sensor. To answer your flash question I do use a lot of flash and I was always locked into manual shutter with the A7IV. Is there any real benefit to having electronic shutter trigger my flash? I feel like the sound of the shutter is just as distracting as a bright light? also, thank you for the quick reply! 

With Canon's E-TTL flash system all flash is treated as Fill Flash except in Manual Mode. In Manual Mode its treated as main light. Its been a long time since I dealt with Minolta's/ Sony's ADI/ Pre-Flash TTL flash system. Canon handles AF Assist Beam projection differently than Sony. The body can emit an LED AF Assist Beam or the speedlite can fire Intermittently to provide an AF Assist Beam from older speedlites. That have an older IR AF Assist Beam that was designed for SLR cameras.

How much video do you shoot? If you were to shoot video, Is 4K 24p enough? If video is something you do, what is the typical length or duration of shooting?

I don't shoot video at all. If video gets booked I have a guy that I work with who takes care of all that.
