Does anyone know if you can save current settings as a profile, and then switch to that profile when you need it? I shoot a lot of astro photography and I would like to switch to that setup quickly.

Not with a T7, you need more than a Rebel.
For one thing, there is no way to programmaticly change the mode dial.

Correct. Not from a Rebel camera body. Sorry, you cannot define custom shooting modes.

Any that has the "C" on the command dial. I think the 90D would be the next step up.

You have the ability to set and store certain settings in your Custom Functions. Refer to your manual for the specifics on that.
