In other words, is there a way I can move quickly from shooting portraits to action photos (Muay Thai/boxing) in a matter of seconds by toggling my iso/shutter speed/etc settings from one to the other and vice versa without needing to completely re-enter all of my settings every time the “genre” changes?
Specifically, I’m just learning my way around a 5D Mark IV, using a 24-105mm lens which works well in both of these environments, so the lens won’t be the issue here.

You can define Custom Shooting Modes on the shooting mode dial. Download a copy of the full User Manual from Canon to learn how to set it up. It is not a complicated process. The manual will tell you where to go in the menus to save your settings.
