I'm looking for an affordable way to get a long exposure photo of plasma in a particle accelerator- it is a low-light environment and I'm anticipating a needed exposure time of at least several minutes to collect enough light to actually see the plasma- I think the 18-55mm hit lens should be fine. I'm really just trying to figure out of the EOS T7 can use a wired remote shutter release to take an exposure of this length

Yes. Look into using Bulb mode. See page 114 in the User Manual.
Remote Switch RS-60E3 can be used with your camera. See page 271.
