Does the age of the ink in a cartridge have an effect on a print?

Depending on conditions, it might.
What is more likely however is a partially clogged print head.

What problem are you having, or is this just a general question?
If a general question, Canon has stated that there is no expiration date for the Pro-100 inks.
But, as Rick said, not printing for a long time could result in ink drying out in the printhead and resulting in clogging.

This was just a gneral question. I have not used my Pro 100 in a while and just wanted to be sure ink was still good. I do not see any issues with prints and have not had any issues with clogging, but if I do, what would I see on my prints that woudl indicate clogging?

Depending on the level of clogging you could see banding up to a complete loss of a color(s).
Just run a nozzle check and see how it looks.
Dye ink printers like the Pro-100 are more resistant to plugging than pigment ink printers.
