Just received my R5 Mark II. I am trying to set the DOF button on the front of the camera to temporarily switch to continuous shooting mode but I cannot get it to work. If I go through the menu and change from single shot to continuous shooting, I can shoot a burst of 30 fps but for some reason I cannot get the DOF button to temporarily switch to this.
I want my default shooting mode to be single shot but when I press the DOF button, I want it to change to continous shooting (30 fps).
I have seen videos of other folks setting this up. Not sure why mine doesn't work.
Any help is greatly appreciated.

In the video, Duade Paton shows how he is changing the frame rate while in continuous shooting. The point being that you need to already have the camera set to one of the continuous shooting modes, and then with the button you can choose which alternative to select. Also this only happens while the button is pressed, it's not a toggle on/off.
The closest I can suggest is to set your camera to the low speed continuous shooting mode, and slow that one down from 3 to 1 fps. Then use this button like he shows to switch over the high speed and 30fps.
According to the manual you can set low speed from 1 to 15fps, high speed from 2 to 20fps and high speed continuous + between 3 and 30fps.

Welcome!
Do you have a link to a video that you described? Custom Controls programming mode is used to customize buttons and dials.
The User Guide should have tables that describe which custom functions are available for each button and dial. It should also show you what the control icon looks like, assuming that the functionality is available for the button.

This is the video I was referring to. The setup information is at the beginning of the video.

That worked. Thank you so much for your suggestion. I set the low speed to 1. High speed to 5 and high speed continuous to 30. I've set my default shooting mode to low speed burst.
I'm now able to temporarily shoot in 30 fps by pressing the DOF button along with the shutter.
Thanks again for your help.
