so .. time is winding down for the MCAS Miramar Air Show in San Diego Ca , ive read that faster write speeds can be advantageous, what write speed would be good with my t7 and sigma 150-600 lens would be .

I have a T7 and use Lexar and Sandisk cards - usually no larger than 64gb.
The write speed of a photo to the card is different for writing JPG’s, RAW and JPG + RAW photos. For instance, my T7 produced JPG’s that are about 5mbs per file and RAW files that are about 30mb per file. I suppose if you shoot RAW + JPG, add the 2. My point is that the buffer fills up faster when you shoot larger files and the camera pauses shooting until buffer space is free.
My experience is when shooting RAW files in Continuous at 3fps, I get 10 or 11 shots before the camera pauses to write the buffer to the card. It’s been a while since I shot JPGs, but I don’t recall the camera pausing as I described when shooting RAW files.
So if you are at Miramar and you are shooting RAW or RAW + JPG, try to limit your continuous shooting to bursts of 5-8 shots at a time to hopefully avoid filling the buffer and not being able to shoot again until the buffer empties.

I have used SanDisk cards up to 32GB with no trouble. I have the same setup as you.
