Is there a way to record RAW images and .jpg images to different cards simultaneously? I didn't find that in the user manual but maybe I'm overlooking it? I normally shoot RAW exclusively but am interested in the in-camera AI upscaling feature which can only be used with .jpg files. If I can put them on separate cards, that would be a lot easier in the end.

Looks like you need to select Record Options>Record Separately, then select the record format for each card.
Canon : Product Manual : EOS R5 Mark II : Selecting Cards for Recording/Playback
Then go to Tab 1 Image Quality and set the image format for each card.
