Hello,
I am about to send my Canon Rebel T6I to a repair shop and I know that my camera has no internal memory or anything and I am not going to leave my SD card inside the camera, but I am a bit concerned that if I send my camera maybe someone would be able to restore my images out of the camera or something like that, is that even possible??

No, it is not possible.
There is no internal memory on your camera. The camera has the ability to display a low res jpeg of the last photo taken, but there is no way to access earlier photos without using an memory card.

This sounds like you use the SD card as a photo storage device. Of course it isn't and it is a bad idea to do that. Take your photos off the SD as soon as you can and get them onto your computer and/or backup device.
BTW, it is possible, in some cases, to restore photos from the SD card even after you remove them, or delete them, and format the SD card.
