My connection was much better via the EOS Utility. The Webcam background is an eyesore and unfortunately my viewers have seen it dozens of times as the utility shuts off my camera randomly. Tonight, everytime I switched to view an alternate camera, the utility shut off the Canon.
I need some instruction on how to completely uninstall this driver / utility.

Finder > Applications Folder > drag to trash.

There is an uninstaller in the program folder for this, but even this does not remove the webcam utility completely under MacOS Big Sur. When you restart the computer you may find entries like this in system.log:
iMac com.apple.xpc.launchd (com.apple.xpc.launchd.user.domain.501.100010.Aqua): Could not import service from caller: caller = otherbsd.336, service = XE2XNRRXZ5.com.canon.Digital-Photo-Professional-4.Cloud-Develop.Beta.Dpp4XPCDCCHelper, error = 119: Service is disabled
