It might just be a setting somewhere, but when I try to make a video the camera only takes a (one) photo. It still gives the remaining recording time etc.
How to correct this?

I assume this is the PowerShot S100 and not the S100 Digital Elph camera. It sounds like you are pressing the shutter button and then not activating the video. Pressing the shutter at the beginning allows the camera to determine the best settings to be used, but does not actually start the video. The movie mode is activated with the movie button, and is stopped with the same button. Make sure you take your finger off the movie button while shooting the video.
