I was planning on originally getting the cannon 70D but heard to look into something different. I found the R50 for like $20 more and was wondering if that’s the better choice? Thanks for the help.

Do you have any existing lenses? If so, what kind? For example, if you have EF or EF-S and opt to going with the EOS R50, you'd need an adapter ($99).
If you're starting new, the EOS R50 would be the way to go. Be sure to budget lenses. Look at either RF-S or RF lenses.

I don’t have any lenses yet, if I were to get the cannon 18-55mm and the cannon 70-200 would I need an adapter

If you're looking at RF lenses (e.g. the RF-S 18-45mm; note that this RF version only goes to 45mm), you do not need an adapter. Since you're starting new, I'd strongly recommend sticking with RF lenses.
However, if you're on a budget and want to pick up potentially cheaper EF-S or EF lenses, then yes, you'd need an adapter for those.
