I have the Canon 70D and had to turn the dial to "M" manual mode to adust my settings.
Can I turn the dial back to "A+" mode and will the camera keep the same settings.
I had to adust the Rode in "M" mode to get the sound adusted, now I want to switch back to A+ Auto mode for video recording as that is why I bought the Canon 70D because I'm new to video recording and wanted the auto focus.
I want to use the Rode but I have to be able to use the Canon 70D's auto focus features (I think it has to be in A+ mode I'm not positive).
What is the best place for the dial to be set on for video recording... or does it not matter with video?

No you don't need to be in A+ mode to have the camera autofocus while recording video.
You seem to be in over your head. You've bought equipment, but, don't know how to use it.
My suggestion would be to start by reading the full manual from cover to cover.
There are also lot of useful videos on Youtube that might help.
