I was originally going to get the EOS 6D Mark II but then I was wondering if EOS 5D Mark IV would be better for both? Mirrorless isn't in my budget right now so I'm looking at DSLR. TIA

Adding a lens means raises teh question of budget. A professional grade lens may cost as much as the camera body, or even more. Here is a good starter kit.

If you are just starting out, then I recommend the R series of cameras. While the R6 mark II is not the flagship camera in the R series lineup, it is price is almost comparable to the DSLR models you originally cited.

This is the best advice. I have done more weddings than I can count. And, starting out there is no logical reason to stick with a DSLR.
I can tell you if you are serious you will need more than one lens. A lot of people think "wow" I would like to start doing weddings. They have no idea how or what it takes to be successful at it.
