The subject says most of it.
Can anyone recommend a shop to check out, and if necessary, service a circa 1978 35 mm AE-1in the New York City metro area?

"You can test/check everything on it without putting film in."
But you will need an AE lens to see if it stops down correctly. Replacing the battery is about all you can do yourself.
I would say if the meter works the camera is working.

Well, I assumed the OP has a lens. Specifically, an FD-mount lens. I hope he does.
Replacing the battery is all he can do himself to SERVICE the camera. He can do EVERYTHING to test it.
With an exception.....if it suffers from the notorious "A-Series Mirror Squeal", that can be remedied easily. I can provide links to websites showing how.
