Hello
Suddenly my Canon R7 takes two secs to store image file after taking continuous shots. So I have to wait up to two secs before I am ready to shoot again - meaning the bird I am shooting might have flown away. How might the issue have occurred? I am on electronic shutter and One Shot setting - same issue on Servo mode.

When was the last time you low level formatted the card?

I haven't formatted the card for a long time. So what is "low level" formatting - should I give that a try?

SD memory cards do not come preformatted, despite appearances to the contrary. What seems like a preformatted card is actually residue from production testing that needs to be totally wiped out.
All SD memory card should be low level formatted prior to first use. You should use the camera to format your cards. You will see a checkbox ☑️ for low level format.
How long are your bursts? The camera has an internal buffer that captures the images and then writes them to the card while you are shooting. The camera can capture images faster than it can write them to the cards. This is why the camera has an internal buffer.
When you fill the buffer, the camera will stop capturing images until it can empty the buffer. I suspect that this could be what you are experiencing.

I probably go to far in the other direction. Once I have transferred the files off my SD card (verified all have transferred) they go back into the camera and get formatted every time. I use mostly V60 cards since I only shoot stills and so far I haven't had any challenges with the speed of the cards. I also rarely shoot 30 FPS.

You should low level format your card before all sectors have been used. You can search for Garbage Collection to find how NAND flash drives work and why they become slow.
