Just purchased a new EOS M6. Love the camera, but the Canon Connect app is giving me fits. I will admit that I'm new to the Canon way of doing things, but I'm not a novice to this stuff.
I went thoruhg the steps to pair the camera and my phone, and each device shows up properly in the other (or so it seems). According to the camera's instructions, it should connect via bluetooth to my iPhone when the WiFi is turned off. However, it won't work for me. If I shut off the phone's WiFi, and attempt to connect using bluetooth, a screen pops up telling me to connect via Wifi with a password. I can't find anything that allows me to use bluetooth. Am I missing something obvious?

Try going to Settings->Bluetooth on the iPhone. Then you should see the camera and select Pair.
You don't get a Bluetooth popup like you do for wifi.
