how can I avoid that my printer goes on sleep?

I should absolutely reach it remotely, even if none is in office...

may you please give me the steps to follow?

model apart, do you know if the "Wake on LAN" feature is usually provided by canon or not?

This may be a device specific feature, but the wake feature is normally available on Canon products. We suggest reaching out to Canon in your country at the above link, to be sure your specific model offers that feature.
