I have a Rebel T2i EOS 550 camera.

When I take a picture and plug the memory card into the computer, two images of the picture show up. It appears they are with different exposures.

How do I stop the computer/card/camera from doing this, and only take one image?

Probably the difference in what you're seeing is that the camera is processing the JPG and the RAW file is just with the basic settings, waiting for further processing in DPP or some other software.

You can set the camera to save in just RAW or JPG.
