In effect your EOS R6 Mark II has a separate "limited" video mode that is used when you press the movie button while the movie / photo switch is in the photo position.

The limited video settings for the "photo" mode are found on page 10 of the red menus as shown below.

EOS R6 Mark II How to set video shutter speed in M photo mode

When in any given photo mode (primarily, I use Manual) there is the option quickly record a video by simply pressing the record button (while still in M photo mode). Is there any way to depict which settings will be associated with this feature?

On my R5 mark 1, this same functionality is tied to the custom mode 3 video settings. This does not seem to be the case for the R6ii. The settings it assigns does a great job of defining the proper exposure however, through playback of the video files, I can tell that the shutter speed is all over the place.

Forgot to add... that the video while in photo is captured with camera chosen settings, you cannot control the shutter speed, aperture or ISO for the video. Theo only option is to adjust the brightness with exposure compensation.

Unfortunate. Thats about the same info that i had determined on my own as well. I was not aware of the menu page though. Thank you for bringing that to my attention and for all your insight!

One further question, Is it know what movie mode is fixed to this scenario? Is it simply "Auto" mode

Yes exactly that, it’s auto exposure with the option to adjust the exposure compensation only, no control of shutter speed or aperture.
