An underscore at the start of a file name indicates that the picture was taken in the Adobe RGB colour space. So I'm guessing that when you changed time zone, you also (perhaps inadvertently) changed the colour space.

This is explained on page 196 of the manual, in the section "Color Space".

I have the Canon EOS R5 (first edition). I was in Europe two weeks ago, after a couple of days I remembered to switch my time zone to the current correct time zone. I also did this three more times on the trip. When I returned home from my trip and downloaded the images I realized that my file name had changed at the time my first time zone was updated. My file name starts out 5J0A, now it reads _J0A. This seems like a simple fix to change it back but I can't figure it out. Can anyone help me?
