Kv makes a very good point. It helps a lot to know what model we are dealing with. Looking at your previous posts, I would assume you are using the R8.

That said: generally speaking this is how I would do it. I am referring to the R8 Advanced User Guide, which is what you should be using.

Turn the Mode Dial to C1 (or C2),
Make whatever customizations you want to the camera.
In the 5th Page of the Wrench menu, select Custom Shooting Mode
In that page select to save settings to Custom mode

There are two options here. One is to have the mode update automatically while in that C mode, the other will not. Thus, if you make changes while in C1 (for example) they would not be automatically saved as the default for that mode and when you next use it, it will revert what was manually saved. If you choose automatic, it will save any new settings when you make changes.
This video may help:

<iframe class="embedly-embed" src="https://cdn.embedly.com/widgets/media.html?src=https%3A%2F%2Fwww.youtube.com%2Fembed%2FYJYNRkbHAgY%3Ffeature%3Doembed&display_name=YouTube&url=https%3A%2F%2Fwww.youtube.com%2Fwatch%3Fv%3DYJYNRkbHAgY&image=https%3A%2F%2Fi.ytimg.com%2Fvi%2FYJYNRkbHAgY%2Fhqdefault.jpg&type=text%2Fhtml&schema=youtube" width="200" height="112" scrolling="no" title="Get the most out of your camera!

Thank you for all the step by step guide.

However, it doesn't solve my issue. All I want is bracketing the exposures (2F stops under and over, thus 3 shots all together) and save it to C1`. Thus the next time I want to shoot HDR is simply set me selection to C1.

I hope I make myself clear

To be honest, I'm a bit confused. Can you say specifically what is not working for you with the info you have received so far please?

I have found a video for assigning AEB to a custom button, I hope this is more helpful: while some of the menu selections might be different from your R8, they can be found in your Advanced User Guide as mentioned, still the principle is there.
How to Register AEB on EOS R as a Custom Mode - YouTube

Once C1 is recorded, and then recalled by dialing it, all of the settings will apply from condition of recording a C1 setting will be kept, but there is nothing to prevent one from changing any of them from that point for the specific instance of a shot. If you know you want to use AEB, then first switch to C1 first, then adjust your camera's other settings as you would normally do.

If that is not working for you, are you looking to assign the exposure bracketing feature alone to a button?

I think there may be a challenge of terminology here. I have ploughed through the menu system of the R8 and searched on-line for HDR customization and setting, and any suggestion that they can be assigned to the custom menu. and Newton is strictly correct, I believe.
However, I think what the OP is seeking is not HDR, but AEB which can be customized, and saved to a C1 or C2 setting - I just did it on my R5 and it should work on the R8. The intention of the two would be similar, but AEB gives much more control over the process, from what I can see.

So, can I suggest that you go to the red tab, 2nd page and turn off HDR if you have it set, and go up the menu in the same screen to configure and customize the settings for exposure/AEB and make the changes within that which you want to configure.
Then go to the Wrench screen, Page 5 and Save the current configuration to C1 or C2. If you don't want auto updating (best not at first) then make sure that option is off.
Turn the camera off.
Turn it back on, and make sure you are in the C mode you saved to.
Check the settings in the menu Red Tab page 2 and check to see if the AEB is retained.
Then change the mode dial to Av or M
Check the Red Tab again, it should be back at the default settings with no AEB.
Turn the mode dial to C1 again and recheck, it should be back in AEB.
You should be able to change SS, aperture and ISO but still retain the bracketing
Can you please let me know if how that works out for you?

Trevor, this is what I get regardless of which way I approach it. These shots are from the R5, but it's the same on all of the R's I own (I just tested all to be sure). Not sure if it's a difference in f/w in the U.S. or what, but mine will not allow HDR to be assigned to C functions.

It's grayed out with HDR enabled.

If you select it, this is the message.

Newton

Can I also ask what mode you want to be shooting in when you have AEB or HDR turned on?

The instructions I listed work in Av, Tv etc. but you will get exposure compensation recorded to the C buttons, but not AEB in Manual mode specifically, and maybe that is what we are all working around.

I agree, see my response to you. I have been trying instead to get AEB to work, and it will, in my experiments, providing everything the OP wants, EXCEPT if he is shooting in M mode, but it works for Av, Tv etc. when the settings are saved to C1 or C2 - if M is current when saving the settings, it will save the Exposure compensation value, but not the AEB parameters.

It's not easy researching all these things for another camera body and I am furiously moving between resources to cross-check, but AEB is the best bet, but not in M mode.
